Masterclasses are an integral part of the concept at \u201cShiki Sakethek.\u201d<\/strong> The opening session, featuring cheesemaker Michael Kerschbaumer, even surprised sommeliers: Carinthian cheese specialties and Japanese flavors came together in an umami explosion!<\/strong><\/p>\n

To create a space for experiencing Japanese culture, Joji Hattori<\/strong> has expanded his restaurant \u201cShiki\u201d<\/strong> with a boutique and Sakethek<\/strong>. This time, the gathering on Vienna\u2019s Krugerstra\u00dfe had a distinctly Carinthian character: Michael Kerschbaumer<\/strong> brought a selection of cheeses from \u201cKaslab\u2019n\u201d at Lake Millstatt<\/strong>.<\/p>\n

Sake sommelier Barbara Bahr<\/strong> carefully selected the sake pairings<\/strong>, while also providing a general introduction to the possibilities of this Far Eastern beverage. She explained that \u201csake pairs well with bitter flavors because it contains no tannins and has only mild acidity,\u201d<\/em> noting that it can even have certain advantages over the tannins found in wine.<\/p>\n

This is particularly relevant because mature cheeses with their subtle ammonia notes can be difficult to pair with beverages. Red wine, in particular, reaches its limits in such combinations.<\/strong><\/p>\n<\/div>\n<\/div>\n<\/div>\n<\/blockquote>\n<\/div>
