On July 1st<\/strong>, the Vienna Opera Summer<\/strong> celebrates its premiere. In a spectacular arena at Heumarkt<\/strong>, musician and artistic director Joji Hattori<\/strong>\u2014known to gourmets as the top restaurateur behind Shiki<\/strong>\u2014presents La Traviata<\/strong>. The culinary connoisseur and his wife Sabine<\/strong> in conversation.<\/p>\n

He is the undisputed king of Japanese delicacies \u2013 at his Michelin-starred restaurant Shiki<\/strong>, and now also at the Shiki Boutique & Sakethek<\/strong> on Vienna\u2019s Krugerstra\u00dfe, where stars and artists regularly come and go. And since Joji Hattori<\/strong> (56) is not only a brilliant culinary artist but also has had a celebrated career as a violinist and conductor<\/strong> (including with the Vienna Chamber Orchestra<\/strong>), he now ensures acoustic pleasures<\/strong> as well.<\/p>\n

Since last year, the charming father of a seven-year-old son has served as the artistic director<\/strong> of the Vienna Opera Summer<\/strong>, which he himself initiated. This year, Hattori invites the public to a specially constructed arena at Heumarkt, where from July 1st to 19th<\/strong>, around 24,000 people<\/strong> will be treated to a fabulous production of La Traviata<\/strong>.<\/p>\n

A special highlight: Oscar-winning actor Karl Markovics<\/strong> guides the audience through the masterpiece in the role of narrator as Giuseppe Verdi<\/strong>. (More information and tickets: opernsommer.at<\/a>)<\/p>\n

Just before the premiere, MADONNA<\/strong> visited Joji Hattori and his wife, physician Sabine Hattori<\/strong>, at their beautiful home in D\u00f6bling<\/strong> to talk with them about their love for each other<\/strong>, fine cuisine<\/strong>, and music<\/strong>.<\/p>\n<\/blockquote>\n<\/div><\/div><\/div>

It\u2019s the day of the opening, and J\u014dji Hattori<\/strong> stands, wearing white gloves, beside a Japanese guest in front of a shelf. The guest is \u201ca Japanese luminary\u201d \u2013 and an exception: as a representative of the renowned lacquerware house Nosaku<\/strong>, he not only knows Vienna well but is also quite open to the exchange of goods \u2013 something that doesn\u2019t apply to all Japanese producers.<\/p>\n

In fact, J\u014dji Hattori explains, there was a great deal of skepticism when he traveled through his homeland in recent years to source products for his latest project. For example, the porcelain manufacturer Fukagawa<\/strong> exported more than half of its porcelain abroad during the late 19th and early 20th centuries, when Japonism<\/strong> was fashionable in Europe. But when Hattori approached them a few years ago, he was told: \u201cWe don\u2019t export.\u201d
\u201cWhy?\u201d he asked.
\u201cWe don\u2019t have any staff who speak English,\u201d was the reply.<\/p>\n

\u201cJapan is a major export nation, but since World War II, the country\u2019s export history has focused exclusively on Western-style products like cars and televisions,\u201d notes Hattori, himself a great-grandson of Seiko founder Kintar\u014d Hattori<\/strong>. \u201cThe idea of selling our own cultural goods abroad has been completely forgotten.\u201d<\/p>\n

Fine Lacquerware<\/h3>\n

Hattori wants to change that \u2013 at least on a small scale. His new Shiki Boutique<\/strong> is a blend of sake day bar<\/strong> and shop for Japanese craftsmanship<\/strong>, located just a few doors down from Shiki<\/strong>, Hattori\u2019s fine dining flagship in Vienna\u2019s Krugerstra\u00dfe<\/strong>.<\/p>\n

Here you\u2019ll find wooden sake vessels<\/strong> and small boxes with hand-painted inlays<\/strong> that almost appear to be made of black plastic \u2013 so smooth are they. The wood, says Hattori, is painted 30 times over the course of a month<\/strong>, \u201cuntil the lacquer is so durable that you can even eat miso soup from it.\u201d<\/p>\n<\/blockquote>\n<\/div><\/div><\/div>

Joji Hattori\u2019s “Shiki” continues to grow<\/strong>: Just in time for the tenth anniversary of the Vienna fine-dining restaurant, the concept is being expanded with a new store. With the new Shiki Boutique | Sakethek<\/em><\/strong>, the conductor and restaurateur wants to give his guests the opportunity to take a piece of Japan\u2019s culinary and design culture home<\/strong>.<\/p>\n

In the light-filled space<\/strong> at Krugerstra\u00dfe 15<\/strong>, visitors can taste the spirit on-site<\/strong> and purchase it for their own bar. But that\u2019s not all:<\/p>\n

\u201cThe Shiki Boutique presents a curated selection of Japanese lacquerware, porcelain, tin works, knives, and artistically crafted textiles<\/strong>. Many of our partner artisans are exporting their masterpieces to Europe for the first time,\u201d explains Joji Hattori<\/strong>.<\/p>\n

And he adds:<\/p>\n

\u201cIt has long been my dream to showcase the most beautiful pieces of Japanese craftsmanship in Europe. Although there has been genuine interest in Japanese craftsmanship in Europe \u2013 especially since the Japonism movement of the 19th century \u2013 there are hardly any stores here today that actually sell such items.\u201d<\/p>\n

When you take a seat at the beautiful tasting table made of light wood, you might feel tempted to let out a little cheer. But you don\u2019t \u2013 because the ambiance of Vienna\u2019s first Sakethek<\/strong> signals seriousness.
J\u014dji Hattori<\/strong> has expanded his spectacular Vienna restaurant Shiki<\/strong> with this new addition. Someday, there may also be a small menu at the other end of Krugerstra\u00dfe<\/strong>, but for now, sake reigns supreme<\/strong>.<\/p>\n

The perfectionist spent a long time searching for the right refrigerators.<\/p>\n

\u201cFor a brewed product like sake, the correct temperature is crucial. Minus 2 degrees is ideal \u2013 but very few cooling units can handle that.\u201d<\/p>\n
